I have a job that I love.
I get to cook food and eat food and talk about food and sell people food. You could say I'm living the dream.
I also spend half of the day working from home, which just means I can sit in bed with the pups and watch Arrested Development while sending e-mails to people and designing newsletters.
THAI PEANUT CABBAGE SALAD
1/2 red cabbage, shaved
1/2 cucumber, diced
1 medium carrot, shaved
1/4 yellow bell pepper, diced
1/2 jalapeno, minced
1/4 red onion, minced
1/2 cup peanut butter
1/4 cup olive oil
1/8 cup apple cider vinegar
3-4 tbs sriracha (more or less to taste)
1 clove garlic, minced
Chopped peanuts for garnish
In a large bowl, mix together the cabbage, bell pepper, jalapeno, onion, carrot and cucumber. Set aside.
**note - I used a potato peeler to shave the carrot into thin pieces.
In another small bowl, combine the rest of the ingredients and whisk to combine to make your dressing. It will be pretty thick.
Add the dressing to the cabbage blend and mix together until evenly coated. Serve in a bowl and top with chopped peanuts.
I think I may or may not have also added in cilantro, but I don't remember. Go ahead and be crazy. Add some.
