There are two great things about being done with class by 11:00 a.m. The first being that I am done with classes by the time most people are beginning class. The second is that I'm home at the perfect time for brunch.
It combines two really wonderful meals of the day. I bet the person who invented brunch was all, "Eggs are great. Salads and sandwiches are great. Pancakes and waffles are great. So why not eat them all at the same time?"
And that person is a genius. I'd probably marry them if I ever met them, because someone with ideas like that needs to be locked down. You can't find a better quality in a person than "brunch inventor." (okay, you totally can, but you know what I mean.)
The other day I got home and decided to reward my class attendance with brunch. So, i pulled random things out of my fridge and challenged myself to make something good. And I think I succeeded.
SRIRACHA SALAD WITH POACHED EGGS
Lettuce (I chose a mix)
2 tbs. sriracha
1 tbs. olive oil
1 tbs. red wine vinegar
¼ tsp. minced garlic
Salt and pepper to taste
In a small bowl, combine the sriracha, olive oil, garlic, salt, pepper, and vinegar. Mix thoroughly.
Next, add it to your lettuce and mix it up to make sure it is coated evenly.
Cook up an egg or two however you'd like. I made mine over easy, and the yolk mixed with the salad dressing while I was eating it, and made it really rich and creamy. I loved it. Make poached eggs if you're feeling fancy, or just scramble them. Your call. I don't make your decisions.
Top the salad with the eggs and enjoy your new favorite brunch recipe!
(Also, I think the sriracha dressing would be great as a chicken or steak marinade)
