This morning I woke up feeling awful. So, I decided to skip my class and sleep in. I woke up a while later with a massive craving for pancakes. Without any kind of mix or anything available, I decided to make up a recipe. What was even better about making it up, is that I could just make enough for one person.
PANCAKES FOR ONE
½ cup all-purpose flour
¼ tsp. baking powder
¼ tsp. baking soda
1 tbs. sugar
½ tsp. vanilla extract
¼ tsp. salt
½ cup buttermilk
1½ tsp. vegetable oil
Butter and maple syrup
Strawberries and whipped cream
In a small bowl, combine flour, sugar, baking soda, baking powder and salt. In another bowl, beat egg; add buttermilk, vanilla, and oil. Stir into dry ingredients just until blended.
Pour batter by ¼ cupfuls onto a lightly greased hot pan; turn when bubbles form on top of pancakes. Cook until the second side is golden brown. Serve with butter and syrup. Yield: 1 serving (4 pancakes)
I substituted buttermilk for ½ cup of almond milk, with 1 tbs. of lemon juice. I just know that real buttermilk would probably make these a lot better. I also put too much oil in. I had added 1 tbs. into the batch I made, and it only needs about 1½ tsp.
However, topping them off with strawberries and whipped cream made them super tasty. And, even better, I got to enjoy them in bed while watching chick flicks. Sick days are rough…
