I'm a student so a typical meal for me has always been beans and rice. It's cheap, full of protein, and filling. The downside to eating lots of beans and rice is that it is not always healthy, and it can get really boring really quickly.
I love cooking, and I do a lot of it, so for food to get boring, that's pretty sad. I'm better than that.
Too bad I decided to exercise and eat right. That was stupid of me. I mean, I need to and I'll benefit from it in the long run, but eating cheeseburgers in bed while snuggling up with my puppy and watching Netflix is the best...I also may or may not have done that last night...oops...
LIGHTENED-UP BEANS AND RICE
1 1/2 c. water
1/2 c. quinoa
1 can drained, rinsed black beans
1/3 c. salsa
1 chicken breast
1 tsp. onion powder
1 tsp. cayenne
1 tsp. cumin
1 tbs. olive oil
Season the chicken with half of the onion powder and cayenne. Put the olive oil in a pan and get it hot.
Once the oil is hot, cook the chicken.
While the chicken is cooking, boil the water and add the quinoa. After the quinoa is cooked, mix in the beans, salsa, and the rest of the spices.
Serve in a bowl with the chicken. I diced mine so it would be easier to eat (no need for knives). Then top it with whatever you'd like.

This recipe was just as easy as normal beans and rice except it switched things up a bit, was healthy, and filling. I guess eating healthy wasn't so stupid after all. I guess.
