Remember that fantastic lamb recipe I posted, that you totally already made? Right?
If you did, and you’re like me, you probably had a bunch leftover.
“Oh no, not that!” – No one ever.
So I was trying to think of creative ways to use up the extra lamb. One night I diced some up and put it in some masala spiced maggi (basically ramen). Another night I ate some with rice and a yogurt sauce. By the third night I was getting pretty sick of eating lamb, but then genius struck. I should just make a pizza with it.
I had bought a big bag of naan at the grocery store, and decided to use a piece of that as the base, and then layer various things I had in the fridge. Turned out so good and looked so pretty I decided to post the recipe for you guys.
1 tbs. olive oil
½ clove diced garlic
1 tbs. hummus
Thinly sliced lamb
1 tsp. chopped mint leaves
Salt and pepper to taste
Preheat the oven to 400.
Brush the naan with the olive oil and spread the diced garlic evenly to coat. Once the oven is preheated, place the naan in for three minutes. Remove from the oven and spread with the hummus, lamb, and mint.
Place under the broiler for a minute or two. Be careful not to let it stay under the broiler too long, because the thinly sliced lamb will cook really quickly, and you don’t want to over cook it.
I ended up eating mine with a little tatziki and some crushed red pepper flakes for some heat. It was a great way to use up leftovers. If I were to make it again I would probably add some cucumber or green olives. Add whatever your heart desires. Go crazy. Though I’ve gotta say, the mint was an excellent addition (so make sure you add it).
