So something is definitely wrong with me. I have been craving healthy food lately. Weird I know.
I can’t get enough veggies and salad. I guess that’s not the worst thing in the world, it’s just unusual for me. Particularly because I’ve been under a ton of stress lately, to the point where I feel like I might be slowly drowning in anxiety (at least i'm not dramatic, ha!). The usual cure for that is burgers and anything and everything deep-fried.
Maybe this just means I’m turning over a new leaf. Pun intended.
KALE AND VEGGIE SALAD
Cooked brown rice
1 tbs. tatziki
1 tsp. sriracha
Preheat oven to 375.
Marinade two chicken breasts in whatever you want. I used a cilantro and jalapeno dressing that I had in the pantry. I baked them for about 25 minutes, and then shredded it with a fork, and then let it sit and soak up all of the sauce in the roasting pan.
I love cooking chicken like this and keeping it in the fridge because it lasts me awhile, and then I always have pre-cooked chicken to add to meals for the week. It was seriously life changing the first time I did this, and I haven’t looked back since.
In a bowl, place some kale, brown rice, carrot, cucumber and avocado.
In a small bowl, mix together the tatziki and sriracha to make the dressing.
Mix everything together and enjoy.
**This is one of those recipes where I prep a bunch of the ingredients and keep it in the fridge so I can just make up salads whenever I want to and don’t have to spend any time prepping veggies or cooking rice.
It's also really delicious and filling. I've eaten it every day for lunch for the last week and I'm still not sick of it.
