I love breakfast.
If you don't know anything about me, the first thing you should know is that breakfast is my favorite meal of the day. I could brunch for the rest of my life and be completely happy.
Coffee, danishes, fruit, eggs...mmm. I love it all.
With the way my schedule works out this semester, I'm done with classes by 11am...which just so happens to be the perfect brunch time. When i get home, i drop my backpack and head to the fridge to decide what i would like to make.
This recipe may seem random as far as combinations go, but it tasted like heaven. Breakfast heaven.
HEALTHY BREAKFAST TACOS
1/2 zucchini, diced
2 eggs, separated from the yolks
1 c. broccoli slaw
2 tbs. mayo (or greek yogurt)
1 tbs. sriracha
1/4 tsp. cayenne
1/4 tsp. garlic pepper seasoning
2 flour tortillas
In a pan, add a little olive oil and the diced zucchini. then add the garlic pepper and cayenne, and mix to coat the zucchini. Let cook, stirring occasionally, until the zucchini is tender and lightly browned.
In a bowl, combine the broccoli slaw, mayo, and sriracha and mix. Set aside.
After the zucchini is finished cooking, remove it from the pan and set aside. Add the egg whites to the pan and scramble them. Using the same pan as the zucchini lets the eggs soak up the extra seasoning that was stuck to the pan - yum.
After you have all of the ingredients, build your tacos and enjoy with coffee or juice. Or a mimosa if you're feeling fancy.
Now go forth and brunch.
