You know what they say...when life gives you limes and perfectly ripe avocados, make a lot of guacamole and margaritas! Or something like that.
Now I'm sure most of you are fully capable of making guacamole without needing a recipe. You're probably reading right now, rolling your eyes so hard the people next to you can hear it. This just turned out so good and refreshing, I had to share it with you!
Even though it is simple, sometimes simple is the best. The tang of the lime is offset by the creaminess of the avocado, and finished off with the right amount of salt. Makes me wish I was on a beach in Mexico enjoying a margarita...
Oh well, a girl can dream...back to job hunting!
3 ripe avocados, diced
1 clove garlic, minced
1-2 tsp. salt (more or less to taste)
1/4 cup chopped cilantro
Zest from 1 lime
Juice from half of a lime
Put all of the ingredients in a bowl and mix together until the avocado breaks down a bit.
I tend to like mine a little on the chunky side, but if you like it smooth, just add it all to a food processor or blender and puree it.
Also, sorry about the picture. All of my good bowls were in the dishwasher, so I just used a tuber-wear container... #college
