I’ve been feeling kind of down lately. Not sure what’s bumming me out exactly, but all I want to do is be alone and sleep. I try not to have bad days, and when I do think I’m having a bad day, I just remind myself that there are clams out there being chowdered. CHOWDERED. Talk about a bad day.
Regardless, all I wanted was to lay in bed yesterday and eat cookies. I told myself I’d make it a reality as soon as classes were done. Except the worst thing possible happened—I had no cookie ingredients! Dun dun dunnnnn….
…or so I thought. Turns out you really only need three ingredients to make cookies happen, so here it is:
3-INGREDIENT PEANUT BUTTER COOKIES
1 c. peanut butter (any kind you want)
½ c. brown sugar
1 large egg
Pre-heat the oven to 350 degrees.
Mix all of the ingredients together until it forms a dough, and then roll into little balls (about the size of a tablespoon). Then use your fork to make a cross-hatch pattern by gently pressing down on the dough.
Bake for 6 minutes, then let cool on the cookies sheet for 4 minutes. And done, all for a total of three ingredients and only 10 minutes of your time. Not too bad if I do say so myself.
Note: After 6 minutes in the oven, they will still look like dough, and you'll probably think that they should be baked longer, however, letting them cool on the baking sheet will firm them up. Trust me. They'll turn out crunchy if you over-bake them.
